Guest columnists are substituting for her during her absence.) By MARY E. MURPHY The Borden Company "But-ter-mil-leck!" This was familiar cry which rang through Brooklyn streets and hung in the oppressing Summer air of 1814. It was the cry of the buttermilk vendor who pushed a wheelbarrow carrying a butter churn. As the vendor wheeled his barrow through city streets, he summoned his customers with this rhythmic call. Buttermilk is no longer a byproduct of buttermaking, as it was in the old days.

It is made from fresh pasteurized nonfat milk and is carefully cultured to develop its distinctive flavor. It is highly nutritious but low in calories. An eight-ounce glass contains only 86 calories. Don't overlook the versatility of buttermilk for Summer cookery. It is excellent as a base for Summer soups which require no cooking.

And it's also an ideal base as a low calorie salad dressing for fruit salads.
