4 pound marshmallow. 'i cup mayonnaise. Cut bananas in thin slices. Cut marshmallows in small pieces and combine with bananas, mayonnaise and cream which has been whipped. Mix well and pack in freezing compartment of refrigerator.

Allow two hours to freeze with cold control at six. Recipe will serve six. "Add a piece of plmlento or a colored bit of fruit as a garnish," the demonstrator suggested. "Children and men eat with their eyes as well as their mouths and'llke a touch of color in their food." For variety in salads, she suggested using a bed of watercress rather than lettuce, particularly as it is a food rich in vitamins. Romalne is also good, or chicory.

Among her suggestions for frozen dishes' were: FROZEN CRESS SALAD 2 cream cheese cup single cream 1 quart measure water cress 1 teaspoon salt cup mayonnaise 2 cups whipping cream 4 cup stuffed olives (sliced) Cream cheese by adding half cup B. keep cool. Break water cress in parts approximately one Inch long, omitting coarse stalks. Fold whipped cream into cheese mixture.add olives and water cress. Pour into freezing tray and allow to freeze without stirring. Set cold control in third or fourth position for freezing, then cold control In second position until salad is served.

This is more desirable if not allowed to freeze too solid. Serve en crisp lettuce and garnish with half-stuffed olives. Cut olives lengthwise. ANGEL ICE CREAM 1 cup whipping cream teaspoon vanilla 1 egg white cup granulated sugar Whip one cup cream to the consistency of a custard, add cup sugar and vanilla; 1 egg white beaten stiff. Fold all this until consistent in mass.

Put in tray In freezing compartment and forget about it until ready to serve. It needs no further manipulation. Makes four ample portions. Double all ingredients to serve 10 to 12 portions. This recipe can be varied with fruits or nuts or cherries.

FROZEN EGGNOG (The Child's Delight) 2 eggs cup granulated sugar Dash of salt 1 cup whipping cream 1 teaspoon vanilla Beat eggs well, add sugar and salt and continue to beat until the sugar Is all dissolved. Whip cream to the consistency of a custard. Add vanilla and then fold cream into the egg and sugar. Pour in freezing tray. With the cold control at 6 this will take two hours to freeze.

In the course of making several frozen desserts, Miss Adaire explained the process of refrigeration and the correct use of equipment. "Be sure the refrigerator you buy is well insulated," she advised. "Don't expect miracles the duty of a refrigerator is to preserve foods. The making of frozen desserts is simply an added luxury and In making these we cannot use the old recipes that were successful with the old-fashioned type of freezer." "Here's one of the most delicious fresh fruit recipes I know: FRESH PEACH FROZEN CREAM 2 cupfuls sliced peaches.

1 cupful granulated sugar. 2 cupfuls single cream. teaspoonful almond extract. "Don't whip your cream too stlfT that's the trouble in 90 percent of the cream recipes that fail. It should be whipped to the consistency of a custard, and then you'll have a nice texture for a frozen dessert.

Anything else gives a flaky product. "Put sliced peaches through potato ricer, add sugar. Whip cream to the consistency of a custard and add almond extract, then fold whipped cream Into the fruit puree. "Use a perforated spoon for folding your cream into the puree, and be sure never to stir a whipped prod uct. You have expanded it with air during the process of whipping and stirring or beating will cause some of it to return to the liquid state.

The result will be an icy instead of a creamy, frozen dessert." Put in your Frigldaire tray in freezing compartment and let it re main until ready to serve. This recipe makes 10 goodly portions. The pair ought to know what they're broadcasting about, be CHURCH Mission to Lepers To Hold Meeting The annual all-day meeting of the American Mission to Lepers will be held at the Fifth Avenue Presbyterian Church, Manhatan, on Oct. 16, when George McCoy, director of the hygienic laboratories of the United States Public Health Service at Washington, will speak on "Trends in Modern Handling of Leprosy." Dr.

McCoy was formerly director of the leprosy research station at Molokai, Hawaii. Missionaries with experience in leper colonies will speak on conditions and needs of afflicted people and the extension of out-patient stations in all countries subject to leprosy. YOUNG PEOPLE ORGANIZE A Brooklyn division of the Young People's League of the United Synagogue of America will be organized on Monday evening at the East Midwood Jewish Center, 1625 Ocean Ave, with the object of interesting young people in religious matters and arranging various social activities.
